On the vine, Pinot Gris is dark purple in color leading one to believe it produces a red wine. It is really quite versatile and can show different nuances depending on fermentation and skin contact. The Symposium rosé is 100% Pinot Gris. We cold soak the purple grapes to extract the pigment of the skins thus making a pale pink wine. This dry rosé pairs with every season. 40 cases produced.
