We harvested the fruit in 2021 and took our time to ferment and age the wines over twenty months. This 100% Chardonnay sparkling follows the traditional Methode Champenoise indicating that the secondary fermentation happens in the bottle. This dry, delightful sparkler bursts its bubbles in celebration of whatever the night brings. The '1971' is a dedication to Don and Mary, Mummy and Daddy, in this the year of their 50th anniversary. Happy Anniversary (40) 12 bottle cases produced.
